Spicy morning eggs and beans

Switch up your usual weekend brunch menu with these oozy eggs cooked in spicy tomato black beans. Delicious with crunchy sourdough toast or warmed corn tortillas and of your favorite hot sauce.

The Recipe
Ingredients
4 free-range eggs
1 can of chopped tomatoes
1 can of black beans
1 red pepper
1 clove of garlic
5-6 scallions (plus some extra to scatter on top at the end)
Salt
1/2 tsp fennel seeds
1-2 tsp chili flakes (depending on how spicy you want it)
1/4 tsp coriander
1/4 tsp black peppercorns
1/4 tsp cumin seeds
1/4 tsp smoked paprika
Method:
Measure spices and add to a dry non-stick pan, fry gently for 1-2 minutes, stirring all the time, until fragrant but make sure not to burn.
Put all the spices in a pestle & mortar or a spice blender and mix together- it doesn't have to be too fine.
Finley slice the peppers, scallions and garlic.
Add 1 tbsp. of olive oil to a frying pan and allow to heat to make sure the pan and oil are hot before you start frying.
Once hot enough add the peppers, scallions (saving some for the end) and garlic to the oil and dry for 3-4 minutes until the scallions and garlic are starting to brown.
Add your spice mix to the pan and stir, making sure to coat all the vegetables in the spices. fry for 1-2 minutes.
Add the can of tomatoes, add a splash of water from the kettle to the empty tomato can and add to the pan.
Drain the water from the can of black beans and add beans to the pan.
Stir everything together, add salt and pepper. Bring to the boil then reduce the heat.
Add your eggs to the pan, leaving some space between each egg.
Cover the pan and cook for 3-4 minutes- this will depend on how you like your egg cooked, leave for longer if you like a hard yolk (who doesn't want a runny egg though??!!)
Remove the lid and take the pan off the heat, scatter over some chopped coriander and your remaining scallions.
Serve with crusty sourdough bread or warmed corn tortillas. I like to add lots of hot sauce and if your feeling fancy some grated Manchego cheese!
