Baileys & Orange Tiramisu

I love a classic Tiramisu, chocolate orange is the perfect combination with a kick of baileys, it doesn't get better!!

The Recipe


Ingredients

  • 250ml/1 cup of coffee

  • 3 tbsp. Baileys

  • 3 tbsp. Brandy

  • 3 tbsp. Orange Liqueur

  • Zest of one orange

  • 150g dark chocolate

  • 300g mascarpone

  • 4 free-range eggs separated

  • 5 tbsp. caster sugar

  • Approx. 30 ladyfinger biscuits

20cm x 25cm dish with low sides or a small trifle bowl

Method:

  1. Mix the coffee, baileys, brandy and orange liqueur.

  2. Grate the chocolate and orange zest together.

  3. Whisk the egg yolk and sugar until pale, light and fluffy, then whisk in 1 tablespoon of mascarpone at a time until fully incorporated.

  4. In a clean bowl, whisk the egg whites until stiff peak forms. Gently fold the egg whites into the mascarpone mix.

  5. Dip the biscuit one by one into the coffee mix and then arrange in the dish side by side, creating one layer of biscuit. Cover with half the mascarpone mix, sprinkle half the grated chocolate/orange mix over the top, then one more layer of biscuits and finally the remaining mascarpone.

  6. Cover carefully with cling film and leave in the fridge overnight or for at least 6 hours. Before serving sprinkle over the remaining grated chocolate/orange on top.
